Hazelnut postharvest technology: A review

In the Republic of Croatia, hazel (Corylus avellana L.) is fruit species with largest recorded increase in cultivation. Due to its high content lipids and moisture (at time harvest) hazelnuts are susceptible quality deterioration (rancidity development, mycotoxins contamination etc.) therefore proper harvest post-harvest handling necessary preserve their quality. Hazelnuts most often collected from ground by appropriate mechanization. After harvesting, drying a crucial measure. shell should be dried about 7 - 10% moisture, kernel 4 6%. The maximum temperature never exceed 50 °C. Regarding storage conditions, relative humidity important factor 70%, while it optimal range 55 65%. Low temperatures (<10 °C) effective means prolonging hazelnut life because numerous negative processes microbiological activity, notably slowed down. use modified atmosphere (low oxygen concentrations) has also shown an measure life.
